the perfect sunday breakfast

I have fond memories of my dad in the kitchen on Sunday mornings, making breakfast. We would go out to Sag Harbor in Long Island, especially during the summer. Every Sunday, without fail, I would wake up to the delicious scent of breakfast cooking in the kitchen. There were always eggs and potatoes, and either sausage or bacon. For me, every Sunday should start with such a solid meal.

Ingredients

for the potatoes: 
2 large potatoes
1 onion 
2 cloves garlic, minced 
salt and pepper to taste 

for the eggs: 
4 eggs
splash of milk 
pinch of tarragon 
salt and pepper to taste 
1-2 tablespoons of butter 

 sausage or bacon 
vegetable oil

The trick with these potatoes, to make sure they're not too starchy, is to soak them in water for a few minutes first. While they're soaking, you can chop your onions, mince your garlic and put on your sausage or bacon. Everything cooks slow, so you can stir your potatoes and turn your sausage with ease! The eggs, I always leave for last since they cook in only a few minutes! 
The bonus is, you can mix and match your breakfast choices. Add some toast or fruit, have as a side to some french toast or pancakes, whatever you fancy! Eggs and potatoes go with just about everything, in my humble opinion!
