Lemon Drizzle Cake. It's kind of the perfect cake isn't it? It's so fresh and goes great with a nice cup of tea. It's also P's favorite dessert! Since it's P's birthday today, I thought I'd share my favorite little recipe for it! I've made him some (obviously!) but I also made some for our wedding too! It's a classic! The best bit is that it's fairly easy and you can whip it up in no time!
Ingredients
for the cake:
170g self-raising flour
170g caster sugar
110g soft butter
4 tbsp milk
2eggs
zest of one lemon
for the syrup:
3 tbsp icing sugar
juice of a lemon
It's so easy to make! Just cream together the butter and sugar, then add the eggs one at a time. Once those are mixed, add the milk and the lemon zest and then fold in the flour until it's all blended together. Line a loaf tin with parchment paper, and pour the the batter in it. Bake on 160ÂșC for 40 minutes! While it's baking, make the syrup with lemon juice and icing sugar. Once the cake is out of the oven, let it cool for a bit and then pierce the top with a fork all over. Brush on the syrup, let cool and enjoy!
It's the perfect summertime treat! For a picnic or a tea, a nice bit of lemon drizzle definitely won't let you down! You could even embellish it a bit more and add some fruit and whipped cream, or anything really. It's a rather divine desert, and oh so delicious!
