my famous snickerdoodles

I love making snickerdoodles. They are so easy to make and will always go down a treat. Don't let the name fool you though. There's nothing to do with Snickers or nuts in my snickerdoodles. Don't ask me why they're called that either. I've been making these for ages though, and I will keep making them until people stop liking them!

Ingredients 

for the dough: 
1 cup (230g) unsalted butter, at room temperature 
1 1⁄3 cups granulated sugar 
1 large egg 
2 teaspoons vanilla extract 
3 cups all purpose flour 
2 ½ teaspoons cinnamon 
½ teaspoon salt 
2 teaspoons baking powder 

for the topping: 
1 teaspoon cinnamon 
¼ cup sugar

The recipe is so incredibly easy, and it won't take you very long to make a batch (and then promptly eat that batch...). Mix your butter, sugar, egg and vanilla in one bowl. Then mix your dry ingredients in another bowl. Mix the two together until everything is integrated. Then mix the cinnamon and the sugar for your topping together in a small bowl. Roll your dough into small balls, and then roll them around in the topping. Place on a baking sheet and bake for about 8 minutes, until the edges start to lightly brown!
These are great with a nice cup of tea, and they last for ages. Keep them in an airtight container to keep them fresh, but even after a few days, they're just as tasty in not more so!
